Luke, a third-generation butcher with more than 20 years’ experience, leads with skill, integrity, and respect for quality.
Together, they source premium, ethically raised meats from trusted Australian producers, uphold full transparency from paddock to plate, and focus on what matters most: exceptional service and lasting relationships built around great food.

Bass Strait Reserve
Great beef begins with great farmers. Bass Strait Beef is sourced from pristine southern grazing regions where cattle are raised naturally on nutrient-rich ryegrass and clover pastures. These cool coastal environments provide ideal conditions for cattle to mature slowly and naturally.
After careful selection, each carcass is processed using a unique natural hanging method. This traditional approach helps maximise tenderness while preserving the depth of flavour that grass-fed beef is known for. The result is beautifully balanced beef reflecting both the quality of the land and the craftsmanship of good butchery.
Little Joe Beef
Little Joe Beef is something special - the kind of beef that comes from doing things the right way. Bred from carefully selected bloodlines, Little Joe cattle are grass-fed for life with zero added hormones or antibiotics.
Remarkable is the attained marble score of 4+ while remaining 100% grass-fed, something rarely seen world-wide. The result is beautifully tender beef with deep, honest flavour - the kind of steak that reminds you of the paddock it came from and the care that went into raising it.
Lamb of Tasmania
Lamb of Tasmania is a reflection of clean air, rich soil and lush pastures. Raised on fertile fields by dedicated farmers, these lambs are grass-fed in a cool climate that produces exceptional quality. Born and processed entirely on the island, with respect for the land.
The result is beautifully tender lamb with fine natural marbling and a clean, delicate flavour - honest lamb that speaks of the paddocks it came from and the people who raised it with pride and care.
Bangalow Sweet Pork
Bangalow Sweet Pork is pork the way it used to taste - rich, juicy and full of real flavour. Sourced from small Australian family farms, the pigs are raised with care using sustainable farming practices where animal welfare and low stress are essential.

Bendele Organic Poultry
This poultry comes from carefully selected Australian organic growers who raise birds slowly and naturally, focusing on animal welfare and clean farming practices. The chickens are free to roam and fed certified organic feed.
The range includes whole birds as well as traditional butcher cuts, prepared with a straightforward approach. It’s simple - well raised chicken, sourced from farms that prioritise healthy land, careful stewardship and a slower, more considered way of producing food.
